Marzolino di Pienza

This oval-shaped cheese is pure sheep’s milk and each one weighs about 0.800 kg. 

In the past, it was made only with springtime milk, the difference now being that is available almost all year long. It is said that “the weight and relatively oval size are due to the transformation of this product almost at the end of coagulation and is directly tied to the oval-shaped ladle since the mixture would otherwise not be sufficient to have the size traditionally served up.
It is a fresh pecorino that has been aged for about 15 days.
